So I've been busy these past few weeks and I do miss blogging...A LOT!. That's why right now I am going to share to you the recipe of my current obsession: PANCAKES.
What about these pancakes?
Hmm...Actually I don't know really. But I find them very comforting, though. It may be a bit weird that I am associating them with heartaches but pancakes are known to be the ultimate comfort food in almost any time of the day. It may be everyone's favorite breakfast, but I could eat this stuff all day long whenever I feel down, or just plain hungry :P

Ingredients (for 3-4 large pancakes or 5-6 medium-sized pancakes):

Hmm...Actually I don't know really. But I find them very comforting, though. It may be a bit weird that I am associating them with heartaches but pancakes are known to be the ultimate comfort food in almost any time of the day. ...and here it is!
Ingredients (for 3-4 large pancakes or 5-6 medium-sized pancakes):
- 1 cup cake flour (or all purpose flour)
- 1 tsp. baking powder
- 1 large egg
- 3 tbsp. sugar
- 140 ml milk
- 2 tsp. vegetable oil
- 1/2 tsp. vanilla extract
- maple syrup
- butter
- jam (optional)
Steps on how to make the ultimate homemade pancakes:
- Mix all the dry ingredients together (flour and baking powder), then sieve them into a bowl with a mesh strainer.
- In a separate bowl, beat one large egg using a balloon whisk, then add the sugar. Mix it very well and make sure that the sugar is complete dissolved.
- After the sugar is completely dissolved, pour in the rest of the wet ingredients (milk, vegetable oil, and vanilla extract), then mix them thoroughly.
- Slowly pour the egg mixture into the flour. Using a balloon whisk, gradually mix the flour from the center to the outside to avoid pockets of dry flour. When the flour is completely moistened, it is ready to cook in a pan.
- Thinly coat the pan with a vegetable oil using a paper towel, then turn on the burner (in low heat) and heat the pan.
- Ladle the batter into the pan. Now this is the part where you get to decide the size of the pancake that you are going to make.
- When small bubbles begin to form on top and the bottom is golden brown, flip it over. To make the both sides puff up, it is best to do this when the top is still in a fluid condition.
- Repeat steps 6 and 7 until you are completely satisfied with the number of pancakes.
- Once you are done, you can now stack them all in one plate, put on some butter and maple syrup if you like..and then, it is ready to eat!
Tips:
- If you think that the batter is a bit rough and sticky, you can add milk gradually until the desired thickness of the batter is achieved.
- To make blueberry pancakes, add 2 tbsp of blueberry jam and mix into the batter before cooking them.
- To make chocolate chip pancakes, spread some fair amount of chocolate chips into the batter while it is being cooked in the pan.
- Be creative! Aside from the traditional butter and maple syrup, you may put on some jam, Nutella, whipped cream, ice cream, cookie butter, nuts, icing sugar, bananas, bacon, fried eggs, etc... Whatever your taste buds are craving!
Me I like my pancakes with Nutella, strawberry jam, bananas, maple syrup, and butter. Ugh! Eating it can make me forget all of my problems :D
I hope you would try this recipe. It has been proven and tested. I've tried this several times and family loved it! I know that buying a pancake mix would be a whole lot easier, but I think making pancakes from scratch is better, especially when you are going through heartache.
